Another Summertime treat? The most DELICIOUS zucchini recipe ever. Really.

Whether you have zucchinis currently growing in your garden or you plan on purchasing some at your neighborhood Farmer's Market or grocery this Summer - you MUST try this recipe!

I love love love the blog Smitten Kitchen - not only for it's collection of simple, healthy and delicious recipes, but for the amazing photography too!  Since my little family is trying to eat a little healthier these days, I've been searching for more vegetable side dishes - and when I came across this zucchini recipe, I HAD to try it.  Why?  Because the first line of the blog post contains the words 'five minutes to prepare, best side dish ever, and 3 steps.'  For someone whose a mediocre cook at best, those words are music to my ears!  I was totally skeptical that this dish was too simple to be as good as the author claimed...

...and boy was I wrong!  Let's just say that we devoured the entire pan.  The trick really is as the author says - just heat up the zucchini at the end, don't cook it.  Which is exactly what I did when we finished the first pan of the best side dish ever:  I returned to the kitchen and prepared a second pan.  I'm not kidding - this Summer recipe is that good.  You will not be disappointed.  Enjoy!
